Adding some bay leaf to your dish, will give a slightly bitter and woody taste. This will do very well in sour dishes. It also gives taste to for example bolognese sauce, beef stew and chicken.

Hasselback pumpkin

Find an organic bottle pumpkin and slice it in half over the entire length. You can leave the stalk on. The stalk is not eatable, but it makes the dish look nice. Scrape the seeds out and peel the pumpkin. Put both halves in a pre-heated oven on 180 degrees for about 15-18 minutes. Then take the halves out of the oven. The halves are now soft enough to cut them.

Cut the pumpkin from the convex site, but not all the way through. Put a sate stick under your knife to prevent cutting through.

Put some bay leaves in the notches and brush the pumpkin with a syrup of maple syrup, butter and chili pepper. Put the halves back in the oven for 45 minutes.
